Ummamia Young Radish Kimchi (16oz, 32oz)

Yeolmu-kimchi(열무김치) or young summer radish kimchi is one of the many types of Kimchi, a popular banchan ( Korean side dish).

Although yeolmu radish (young summer radish) has small and thin taproots that do not have much use, its thick and abundant green leaves are constantly used throughout spring and summer to make yeolmu-kimchi.

Yeolmu-kimchi is popular in the summer and is often eaten with cold noodles. This is most popular signature kimchi product made with fresh quality vegetables and fruits!

This kimchi is made using a blend of apples, Asian pears, bell peppers, and a homemade onion syrup to achieve the sweet and fresh taste without the use of any sugar or additives!

Kimchi Base Broth

These are the ingredients in our delicious broth that makes up the base for most of our kimchi sauces (everything except for our vegan kimchi)! This is what allows for our kimchi to have that amazing, rich flavor without any added MSG’s or additives! Always guaranteed fresh and healthy for you!

Where can I store my kimchi?

You can properly store kimchi in any normal container or Tupperware! Just be wary that whatever container you use may become imbued with the fragrant aroma of kimchi though! Glass containers usually have less of that scent transfer and so is probably the most ideal container to use. We use BPA-free insulated pouches and so the pouch that we ship the kimchi in is also totally safe to use to store your kimchi!

When and how should I eat my kimchi for the best flavor?

Kimchi can be stored in the refrigerator for up to a year as it is a pickled product. It will get more sour over time and so if you don’t like it as much when it is more fermented, you can use it to make other foods such as kimchi fried rice! When you first receive your kimchi, you can choose to refrigerate it right away, or, you can let it sit for one to two days at room temperature to promote more fermentation of the kimchi! Also, when you serve your kimchi, make sure to serve the kimchi that is at the bottom of the container because that is where the most flavor is!

What is Kimchi?

Kimchi is one of the most popular Korean side dishes that is a staple in all Korean households. It is packed with nutrients as it is made with a large variety of fresh vegetables and also a product of fermentation. Because of the fermentation process that is required for the perfect kimchi, kimchi is also chock full of probiotics! Probiotics are the live bacteria and yeast that occur naturally in your gut and digestive system that help you to digest foods better and maintain the health of your gut. The probiotics found in Kimchi are the same ones that you can find in Greek yogurt and dill pickles! Kimchi is also made with Napa cabbage which is full of vitamin C, vitamin A, and iron.

My kimchi tastes sour as if it has spoiled, did I get a spoiled product?

No you did not! All of our kimchi is made in small batches within 2-3 days of shipping to ensure freshness and high quality. The sour taste that you are tasting is the byproduct of the natural fermentation of the kimchi. Kimchi is a pickled food and so it really does not spoil. Rather, it gets an even deeper taste over time. If too sour for your taste, we recommend that you use the kimchi to make and try other popular Korean recipes such as kimchi fried rice or kimchi stew!

My kimchi product arrived puffed full of air and pressurized? Is this normal?

This is completely normal! This is again, another consequence of fermentation. The natural fermentation process creates bubbles and can also create pressure which is why your packaging is full of air and pressurized! We recommend that you carefully open your package slowly over the sink and then immediately refrigerate it to ensure that it doesn’t ferment any more!

My kimchi arrived bubbling and leaking! Is that normal?

Yes, this is perfectly normal as kimchi is a product that naturally ferments. Especially in hotter weather, this can be more commonplace as the kimchi will ferment quicker due to the higher temperatures. This can cause bubbling within the package as well as a creation of pressure and some leaking. This is totally normal so please just carefully open the contents above a sink and then enjoy!
